Ingredients

  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 1/4 cup coconut oil (melted)
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup (for chocolate layer)
  • OR 1/2 cup melted dark chocolate

Instructions

  1. Line a muffin tin with silicone liners.
  2. Prepare the raspberry filling by simmering raspberries with maple syrup for 8-10 minutes, then mash and mix in vanilla and chia seeds.
  3. In a bowl, combine melted coconut oil, cocoa powder, and maple syrup (or melt dark chocolate).
  4. Pour chocolate mixture into muffin liners and freeze until firm (about 5 minutes).
  5. Top with raspberry filling and freeze again for another 5 minutes.
  6. Add a final layer of chocolate mixture on top and freeze for 2 hours until fully set.
  7. Serve chilled after letting thaw for a few minutes.
