Ingredients
- 1 cup raspberries
- 1/2 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1 tablespoon chia seeds
- 1/4 cup coconut oil (melted)
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup (for chocolate layer)
- OR 1/2 cup melted dark chocolate
Instructions
- Line a muffin tin with silicone liners.
- Prepare the raspberry filling by simmering raspberries with maple syrup for 8-10 minutes, then mash and mix in vanilla and chia seeds.
- In a bowl, combine melted coconut oil, cocoa powder, and maple syrup (or melt dark chocolate).
- Pour chocolate mixture into muffin liners and freeze until firm (about 5 minutes).
- Top with raspberry filling and freeze again for another 5 minutes.
- Add a final layer of chocolate mixture on top and freeze for 2 hours until fully set.
- Serve chilled after letting thaw for a few minutes.
