- 2 tablespoons milk or cream
- 0.5 teaspoon vanilla extract
Instructions
- Prepare the cream cheese filling by beating softened cream cheese with granulated sugar and vanilla extract until smooth. Freeze for 30 minutes.
- In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla extract, mixing well.
- Combine flour, baking soda, baking powder, and salt in another bowl; gradually mix into the wet ingredients until a dough forms.
- Preheat your oven to 350°F (175°C). Scoop dough portions, flatten them, place about one tablespoon of cheesecake filling in the center, and seal the dough around the filling to form a ball.
- Roll each cookie ball in a mixture of granulated sugar and ground cinnamon until fully coated.
- Bake on a parchment-lined sheet for 11-13 minutes or until lightly golden brown. Cool on a wire rack before drizzling with icing made from powdered sugar, milk or cream, and vanilla extract.
