  • Total Time: 32 minutes
  • Yield: Approximately 24 cookies 1x

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 8 oz cream cheese, softened
  • 0.25 cup granulated sugar
  • 0.5 teaspoon vanilla extract
  • 0.5 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • 0.5 teaspoon vanilla extract

Instructions

  1. Prepare the cream cheese filling by beating softened cream cheese with granulated sugar and vanilla extract until smooth. Freeze for 30 minutes.
  2. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla extract, mixing well.
  3. Combine flour, baking soda, baking powder, and salt in another bowl; gradually mix into the wet ingredients until a dough forms.
  4. Preheat your oven to 350°F (175°C). Scoop dough portions, flatten them, place about one tablespoon of cheesecake filling in the center, and seal the dough around the filling to form a ball.
  5. Roll each cookie ball in a mixture of granulated sugar and ground cinnamon until fully coated.
  6. Bake on a parchment-lined sheet for 11-13 minutes or until lightly golden brown. Cool on a wire rack before drizzling with icing made from powdered sugar, milk or cream, and vanilla extract.
