Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Roll into small meatballs.
  2. Brown meatballs in a skillet over medium heat for about 4–5 minutes; set aside.
  3. In a large pot, melt butter over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened.
  4. Stir in flour to create a roux; gradually whisk in beef broth until smooth.
  5. Simmer soup, adding nutmeg and seasoning to taste. Incorporate browned meatballs and egg noodles or potatoes; continue cooking until tender (10–12 minutes).
  6. Stir in heavy cream; heat through before serving.
