- 1 lb ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 2 tbsp butter
- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 cup heavy cream
- ½ tsp nutmeg
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- 2 cups egg noodles or diced potatoes
Instructions
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Roll into small meatballs.
- Brown meatballs in a skillet over medium heat for about 4–5 minutes; set aside.
- In a large pot, melt butter over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened.
- Stir in flour to create a roux; gradually whisk in beef broth until smooth.
- Simmer soup, adding nutmeg and seasoning to taste. Incorporate browned meatballs and egg noodles or potatoes; continue cooking until tender (10–12 minutes).
- Stir in heavy cream; heat through before serving.
