- 2 large ripe bananas
- ½ cup unsalted butter
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 8 oz cream cheese
- ¼ cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, mash bananas until smooth; mix in melted butter, brown sugar, eggs, and vanilla until combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet mixture; stir gently until just combined.
- In a separate bowl, beat cream cheese with granulated sugar, egg, and vanilla until smooth.
- Pour half of the banana batter into the pan; sprinkle with half of the cinnamon-sugar mixture.
- Spread cream cheese filling over the first layer; top with remaining banana batter and sprinkle with remaining cinnamon-sugar.
- Bake for 50–60 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
