- 14 ounces rigatoni
- 1 tablespoon unsalted butter
- 11 ounces spicy beef sausage
- 6 garlic cloves (minced)
- 4 tablespoons tomato paste
- 1 teaspoon dried oregano
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Prepare your ingredients by mincing garlic, grating Parmesan cheese, and cutting the beef sausage into smaller pieces.
- Boil rigatoni in salted water until al dente, then drain, reserving 1 cup of cooking water.
- In a skillet, melt butter over medium heat and sauté the beef sausage until browned. Add minced garlic and cook for another minute.
- Stir in tomato paste, oregano, salt, black pepper, and then pour in the heavy cream; bring to a simmer.
- Toss cooked rigatoni into the sauce along with reserved pasta water until desired consistency is reached.
