Ingredients
- 2 tbsp butter
- 2 lbs chicken, cut into thin strips
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 white onion, diced
- 2 tbsp garlic, minced
- ½ cup chicken stock
- ½ cup roasted red peppers, sliced
- 1 cup heavy cream
- ½ cup shredded Parmesan cheese
- ½ cup pepperoncini peppers, sliced
- 1 tbsp Italian seasoning
Instructions
- Season chicken strips with salt and pepper. In a large skillet, melt butter over medium-high heat and sear the chicken until golden brown (5-7 minutes). Remove and set aside.
- In the same skillet, sauté onions and garlic until fragrant (3-4 minutes).
- Add chicken stock and roasted red peppers to the pan; reduce by half (about 5 minutes).
- Turn off heat; whisk in heavy cream and Parmesan until smooth.
- Return to medium heat, add Italian seasoning and pepperoncini. Stir to combine.
- Add chicken back to the skillet and simmer until cooked through and sauce thickens (approximately 5 minutes).
- Serve hot over desired base.
