  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, minced
  • ½ cup chicken stock
  • ½ cup roasted red peppers, sliced
  • 1 cup heavy cream
  • ½ cup shredded Parmesan cheese
  • ½ cup pepperoncini peppers, sliced
  • 1 tbsp Italian seasoning

Instructions

  1. Season chicken strips with salt and pepper. In a large skillet, melt butter over medium-high heat and sear the chicken until golden brown (5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté onions and garlic until fragrant (3-4 minutes).
  3. Add chicken stock and roasted red peppers to the pan; reduce by half (about 5 minutes).
  4. Turn off heat; whisk in heavy cream and Parmesan until smooth.
  5. Return to medium heat, add Italian seasoning and pepperoncini. Stir to combine.
  6. Add chicken back to the skillet and simmer until cooked through and sauce thickens (approximately 5 minutes).
  7. Serve hot over desired base.
