  • 12 oz Beef sausage (casings removed)
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic (minced)
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • Salt and black pepper (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced Beef sausage and cook for about 4 minutes until browned. Flip and cook for another 2 minutes before draining excess fat.
  2. Stir in potato gnocchi, heavy cream, and chicken broth. Bring to a boil, cover, and cook for 5 minutes.
  3. Add pumpkin puree and minced garlic; stir well. Incorporate fresh spinach and bring back to a boil. Reduce heat, cooking for an additional 3 minutes until spinach wilts.
  4. Season with half of the sage and thyme, salt, and pepper to taste. Mix thoroughly before serving.
