Ingredients
- 1 tablespoon olive oil
- 12 oz Beef sausage (casings removed)
- 10 oz potato gnocchi
- 1 cup heavy cream
- 1/3 cup chicken broth
- 1 cup pumpkin puree
- 3 cloves garlic (minced)
- 4 oz fresh spinach
- 2 tablespoons fresh sage (chopped)
- 2 tablespoons fresh thyme (chopped)
- Salt and black pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced Beef sausage and cook for about 4 minutes until browned. Flip and cook for another 2 minutes before draining excess fat.
- Stir in potato gnocchi, heavy cream, and chicken broth. Bring to a boil, cover, and cook for 5 minutes.
- Add pumpkin puree and minced garlic; stir well. Incorporate fresh spinach and bring back to a boil. Reduce heat, cooking for an additional 3 minutes until spinach wilts.
- Season with half of the sage and thyme, salt, and pepper to taste. Mix thoroughly before serving.
- Garnish with remaining herbs before enjoying.
