- 2 lbs organic chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 lemon (sliced thin and zested)
- 1 package (16 oz) potato gnocchi
- 5 cups organic chicken broth
- 1½ cups organic heavy cream
- 2 cups organic kale (chopped)
- 4 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, heat olive oil. Season chicken with salt and pepper, cooking until golden brown on both sides. Remove and set aside.
- In the same pot, melt unsalted butter, add minced garlic and thyme, sautéing until fragrant.
- Add gnocchi to the pot and mix well with the aromatics.
- Stir in flour while continuously mixing; gradually whisk in chicken broth until smooth. Bring to a simmer.
- Return chicken to the pot with chopped kale, lemon juice, and zest; simmer until kale wilts.
- Finally, stir in heavy cream until creamy; adjust seasoning as necessary.
