  • 2 eggs
  • ½ tsp vanilla extract
  • ¾ cup whole milk
  • ½ cup water
  • 3 tbsp unsalted butter
  • ½ cup castor sugar (for sauce)
  • ½ cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • ¾ cup orange juice
  • ⅓ cup fruit juice (as an alternative to orange liqueur)

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt. Add eggs, vanilla extract, milk, and water; mix until smooth. Let the batter rest for about 30 minutes.
  2. Heat a non-stick skillet on medium heat and melt a small amount of unsalted butter. Pour in batter to cover the pan lightly, cooking for about 1–2 minutes per side until golden brown. Stack cooked crepes on a plate.
  3. For the sauce, combine castor sugar, unsalted butter, and sliced orange peel in another skillet over medium heat. Stir until the sugar dissolves; then add orange juice and simmer until slightly thickened.
  4. Fold each crepe into quarters and place them in the orange sauce to soak briefly before serving.
