- 16 corn tortillas (6-inch)
- 1/4 cup vegetable oil
- 2 cups refried beans, warmed (16-ounce can)
- 1 teaspoon vegetable oil
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 2 cups enchilada sauce (or use taco sauce)
- 8 ounces cheddar cheese, shredded
- Diced tomato
- Sliced black olives
- Green onion
- Hot sauce
- Salt to taste
Instructions
- In a skillet, heat vegetable oil over medium heat. Fry corn tortillas until golden brown and crispy on both sides. Drain on paper towels.
- Preheat your oven to 350°F (175°C).
- Cook ground beef in a separate skillet until browned; add taco seasoning and water, simmering for 10 minutes.
- Assemble pizzas by layering fried tortillas with enchilada sauce, refried beans, seasoned beef, more enchilada sauce, and cheddar cheese.
- Bake for 10 minutes or until cheese is melted and bubbly.
- Top with diced tomatoes, black olives, green onions, and serve immediately.
