Ingredients
- 1 lb cooked and chopped chicken
- 1 cup uncooked jasmine rice
- 1 (14 oz) can coconut milk
- 4 cups chicken broth
- 1 TBSP green curry paste
- 2 TBSP fresh chopped basil (or 2 tsp dried basil)
- 2 tsp thyme
- 1 TBSP ground ginger root
- 1 TBSP garlic powder
- Lemon or lime for garnish
Instructions
- Gather all ingredients and chop the cooked chicken into bite-sized pieces.
- Add the chicken, jasmine rice, coconut milk, chicken broth, green curry paste, thyme, ginger, garlic powder, and basil to the slow cooker.
- Stir well to combine all ingredients evenly.
- Cover and set the slow cooker to LOW; cook for approximately 3 hours or until the rice is tender.
- Serve garnished with a squirt of fresh lemon or lime juice and additional basil if desired.
