- 1 lb boneless, skinless chicken breasts/thighs
- 1 can diced green chiles
- 1 can cannellini beans
- 1 can great northern beans
- 1 cup chopped onion
- 3 cloves minced garlic
- 2 cups chicken broth
- 8 oz cream cheese
- 2 tbsp cilantro (fresh, chopped)
- 2 tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
Instructions
- In your slow cooker, combine diced green chiles, drained beans, chopped onion, minced garlic, chicken broth, cumin, oregano, salt, black pepper, and chili powder. Mix well.
- Place boneless chicken on top of the mixture ensuring it's covered.
- Cover the slow cooker and cook on low for 7 hours or high for 4 hours.
- Once cooked, shred the chicken with two forks and stir everything together until well mixed.
- Serve hot with optional toppings like sour cream or tortilla chips.
