- 6 Tbsp unsalted butter
Instructions
- In a pot, combine sugar, salt, and orange zest until it resembles wet sand.
- Whisk in egg yolks and juices until fully combined.
- Cook over low-medium heat while continuously whisking until thickened (10-15 minutes).
- Add rosemary sprig for flavor infusion; stir for an additional 5 minutes.
- Strain into a bowl, incorporating the butter until melted.
- Cool in the fridge for at least an hour before serving.
