Ingredients
- 8 medium/large croissants
- 100 g sugar
- 1/8 tsp salt
- 1 stick unsalted butter
- 1 cup almond meal/almond flour
- 1 tsp almond extract
- 2 large eggs
- 4 tbsp vanilla extract (alcohol-free)
- Sliced almonds for topping
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together sugar, salt, and butter until smooth.
- Stir in almond meal and almond extract; beat in eggs one at a time until incorporated.
- Slice each croissant open gently and fill with the almond cream mixture.
- Brush the tops with a glaze made from sugar and water; sprinkle sliced almonds on top.
- Bake for about 15 minutes until golden brown. Dust with powdered sugar before serving.
