Ingredients
- 500g ground beef
- 1 cup bread crumbs
- 1 medium onion
- 1 large egg
- 250ml heavy cream
- 4 cups chicken or beef broth
- 2 medium carrots
- 2 medium potatoes
- Fresh parsley (for garnish)
Instructions
- Chop the onions, carrots, and potatoes. Set aside chopped parsley for garnish.
- In a mixing bowl, combine ground beef, breadcrumbs, diced onion, and egg; mix until well combined. Shape into small meatballs.
- In a large pot over medium heat, sauté chopped carrots and diced potatoes until softened.
- Pour in the broth and bring to a gentle simmer.
- In a skillet over medium heat, brown the meatballs on all sides.
- Add the browned meatballs to the simmering soup; stir gently to combine.
- Stir in heavy cream and heat through without boiling. Serve hot topped with fresh parsley.
