Ingredients
- 1 ½ cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- ½ cup milk
- 1 tsp vanilla extract
- ⅓ cup Greek yogurt or sour cream
- ½ cup finely ground pistachios
- ¼ cup cocoa powder
- ½ cup mini chocolate chips
- 1 cup semi-sweet chocolate chips (for glaze)
- 2 tbsp butter (for glaze)
- 2 tbsp heavy cream (for glaze)
- ½ cup chopped pistachios (for topping)
- ¼ cup mini chocolate chips (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf or bundt pan.
- In one mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the wet ingredients: eggs, oil, milk, vanilla extract, and Greek yogurt until well mixed.
- Pour the wet ingredients into the dry mixture and stir until combined; do not overmix.
- Divide the batter into two bowls. Mix finely ground pistachios into one bowl and cocoa powder with mini chocolate chips into the other.
- Alternate spooning the batters into your prepared pan and swirl lightly for a marbled effect.
- Bake for about 45–55 minutes or until a toothpick comes out clean. Cool completely before glazing.
- Melt chocolate chips, butter, and heavy cream together for glaze; pour over cooled bread.
