- 500 g beef mince
- 2 tsp sunflower oil
- 1 onion, chopped
- 1 tsp mild chili powder
- 1 tsp sweet smoked paprika
- 2 tsp ground cumin
- 3 tbsp tomato puree
- 4 large tortillas
- 250 g microwave rice pouch (Mexican-flavored)
- 400 g black beans (drained and rinsed)
- 125 g grated mozzarella
Instructions
- Heat sunflower oil in a sauté pan over medium heat. Add beef mince and cook until browned, about 5 minutes.
- Stir in the chopped onion and spices: mild chili powder, sweet smoked paprika, ground cumin, and dark brown sugar. Cook for another 5 minutes until the onion softens.
- Mix in the tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer on low heat for about 15 minutes until thickened.
- Meanwhile, heat tortillas and microwave rice as per package instructions.
- Assemble your burritos by layering cooked rice, beef mixture, black beans, fresh salsa, and grated mozzarella on each tortilla. Roll tightly to enclose fillings.
