  • 500 g beef mince
  • 2 tsp sunflower oil
  • 1 onion, chopped
  • 1 tsp mild chili powder
  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 3 tbsp tomato puree
  • 4 large tortillas
  • 250 g microwave rice pouch (Mexican-flavored)
  • 400 g black beans (drained and rinsed)
  • 125 g grated mozzarella

Instructions

  1. Heat sunflower oil in a sauté pan over medium heat. Add beef mince and cook until browned, about 5 minutes.
  2. Stir in the chopped onion and spices: mild chili powder, sweet smoked paprika, ground cumin, and dark brown sugar. Cook for another 5 minutes until the onion softens.
  3. Mix in the tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer on low heat for about 15 minutes until thickened.
  4. Meanwhile, heat tortillas and microwave rice as per package instructions.
  5. Assemble your burritos by layering cooked rice, beef mixture, black beans, fresh salsa, and grated mozzarella on each tortilla. Roll tightly to enclose fillings.
