- 1¾ cups sugar
- 4 large eggs
- ½ cup salted butter
Instructions
- Prepare a double boiler by filling a medium saucepan with water and bringing it to a gentle simmer.
- In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
- Place the bowl over the simmering water and whisk continuously for 20–25 minutes until thickened.
- Strain through a fine mesh sieve into a glass bowl for smoothness.
- Cover the surface with plastic wrap to avoid film formation and let cool before refrigerating for at least four hours.
