Ingredients
- 1 pound chicken breasts or thighs, cut into bite-sized pieces
- 1/4 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 cup white rice (or brown rice)
- 1 medium onion, diced
- 1 medium bell pepper (optional)
- 1 cup pineapple chunks (fresh or canned)
- Salt & pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- In a mixing bowl, marinate the chicken with soy sauce, brown sugar, and minced garlic for 10–15 minutes.
- Cook the rice according to package instructions.
- Heat a skillet over medium heat; sauté the marinated chicken until golden brown (about 5–7 minutes). Remove from skillet.
- In the same skillet, add diced onions, optional bell pepper, and pineapple chunks; cook until tender (3–4 minutes).
- Return cooked chicken to the skillet; stir and heat together for an additional 1–2 minutes.
- Serve over rice and garnish with green onions if desired.
