Ingredients

  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

  1. Wash the oranges thoroughly and boil them in water for about 30 minutes until soft. Let cool.
  2. Cut oranges in half, remove seeds, and blend in a food processor until smooth.
  3. Add sugar, almond meal, ground pistachios, baking powder, and salt to the orange puree; blend until combined.
  4. In a separate bowl, whisk eggs until frothy and mix into the orange-nut mixture until smooth.
  5. Preheat oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the pan and bake for 45-50 minutes or until golden brown and a toothpick inserted comes out clean.
