Ingredients
- 2 medium-sized oranges
- 200 grams granulated sugar
- 200 grams almond meal
- 100 grams shelled pistachios
- 6 large eggs
- 1 tsp baking powder
- A pinch of salt
Instructions
- Wash the oranges thoroughly and boil them in water for about 30 minutes until soft. Let cool.
- Cut oranges in half, remove seeds, and blend in a food processor until smooth.
- Add sugar, almond meal, ground pistachios, baking powder, and salt to the orange puree; blend until combined.
- In a separate bowl, whisk eggs until frothy and mix into the orange-nut mixture until smooth.
- Preheat oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
- Pour the batter into the pan and bake for 45-50 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack.
