Ingredients
- 2 medium oranges (400 g), boiled and pureed
- 150 g almond meal
- 100 g finely ground pistachios
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat the oven to 170°C (340°F). Line a springform pan with parchment paper and lightly grease the sides.
- Boil the oranges in water for 60 minutes. Drain, cool, remove seeds, and puree until smooth.
- In a large bowl, whisk eggs and sugar until pale; stir in orange puree.
- In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Fold into the egg mixture until just combined.
- Pour batter into the prepared pan, smooth the top, and bake for 50-60 minutes until set.
- Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
