  • 2 medium oranges (400 g), boiled and pureed
  • 150 g almond meal
  • 100 g finely ground pistachios
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F). Line a springform pan with parchment paper and lightly grease the sides.
  2. Boil the oranges in water for 60 minutes. Drain, cool, remove seeds, and puree until smooth.
  3. In a large bowl, whisk eggs and sugar until pale; stir in orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Fold into the egg mixture until just combined.
  5. Pour batter into the prepared pan, smooth the top, and bake for 50-60 minutes until set.
  6. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
