- 1 ½ cups fresh strawberries, hulled and diced

- 1 ¾ cups all-purpose flour, plus 2 tablespoons for coating berries

- ¾ cup granulated sugar
- 2 tablespoons light brown sugar, packed (optional, for extra moisture)
- ¼ cup unsalted butter, melted
- ¼ cup vegetable or canola oil
- 2 large eggs, at room temperature
- ¾ cup buttermilk, at room temperature
- 1 ½ teaspoons vanilla extract
- 1 cup powdered sugar
- 1 tablespoon milk or heavy cream
- ½ teaspoon vanilla extract
Instructions
- Prepare strawberries by tossing diced berries with sugar and letting them sit for about 15 minutes. Drain and coat lightly with flour.
- Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, combine sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
- Mix wet ingredients into dry until just combined; gently fold in floured strawberries.
- Pour batter into the prepared pan and bake for 55-65 minutes or until a skewer comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
