  • 1 ¾ cups all-purpose flour, plus 2 tablespoons for coating berries
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar, packed (optional, for extra moisture)
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk or heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare strawberries by tossing diced berries with sugar and letting them sit for about 15 minutes. Drain and coat lightly with flour.
  2. Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, combine sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Mix wet ingredients into dry until just combined; gently fold in floured strawberries.
  6. Pour batter into the prepared pan and bake for 55-65 minutes or until a skewer comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
