  • 3 Tbsp unsalted butter, softened
  • 1¼ cups cold unsalted butter (for layering)
  • Egg wash: 1 large egg, 1 egg yolk, pinch of salt

Instructions

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast.
  2. Add cold water, milk, and softened butter; mix until smooth.
  3. Cover dough and let it rise in a warm area for about 1½ to 2 hours.
  4. Form the dough into a square and refrigerate for 1-2 hours.
  5. Prepare the butter layer by flattening cold butter between parchment sheets.
  6. Encapsulate the butter in the dough and roll out into a rectangle.
  7. Repeat rolling and folding several times to create layers.
  8. Shape croissants from rolled-out dough triangles and proof them at room temperature.
