- 4 cups cooked pinto beans (2–15 oz cans)
- 2 chipotle chiles in adobo sauce
- 1 lb Beef sausage
- 8 oz shredded Pepper Jack or Chihuahua cheese
- ¼ cup diced pickled jalapeños
Instructions
- In a large skillet over medium heat, cook diced turkey bacon until crispy, then add the chicken sausage and break it apart as it cooks until browned.
- In a blender, puree the cooked pinto beans with chipotle chiles until smooth. Pour into the skillet and mix well.
- Stir in shredded cheese and diced jalapeños. Simmer on low heat for about 5 minutes to blend flavors.
- Serve hot with tortilla chips or alongside your favorite main dishes.
