Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz penne pasta
- 4 cloves garlic
- 1 ½ cups heavy cream
- ½ cup chicken broth
- ½ cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 tablespoon Cajun seasoning
- Salt and freshly ground black pepper to taste
Instructions
- Cook penne pasta according to package instructions until al dente; drain.
- Season chicken pieces with Cajun seasoning, salt, and pepper.
- In a large skillet over medium-high heat, heat olive oil and cook chicken until golden (about 6-8 minutes). Remove and set aside.
- In the same skillet, melt butter over medium heat; sauté minced garlic for 1-2 minutes until fragrant.
- Stir in heavy cream and chicken broth; bring to a gentle simmer.
- Add mozzarella, cheddar, and Parmesan cheeses; stir until melted and smooth.
- Return cooked chicken to the skillet; toss to coat with sauce.
- Add cooked penne pasta; mix until fully coated with sauce.
- Garnish with chopped parsley before serving.
