Ingredients
- 6 skin-on, bone-in chicken thighs
- Juice of 2 fresh lemons
- Zest of 1 lemon
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth or water
Instructions
- In a mixing bowl, combine lemon juice, zest, olive oil, minced garlic, oregano, salt, and pepper to create the marinade.
- Add chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes or up to overnight.
- Preheat the oven to 425°F (220°C).
- Heat a skillet over medium-high heat with a little olive oil. Sear chicken thighs skin-side down for 3-4 minutes until golden brown.
- Place the seared thighs in a baking dish, pour remaining marinade and broth around them, then bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving.
