Ingredients
- 1 lb ground beef (or ground turkey)
- 2–3 roasted green chiles (Hatch or poblano)
- 1 large potato (peeled and diced)
- 2 medium tomatoes (diced)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp dried oregano
- Salt and pepper (to taste)
- ¼ cup beef broth or water
Instructions
- Prepare the ingredients by chopping the onion and mincing the garlic. Roast and peel the green chiles.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent.
- Add ground beef or turkey, breaking it apart with a wooden spoon until browned.
- Stir in diced tomatoes, potato cubes, chopped green chiles, seasonings, and broth.
- Cover and simmer on low heat for about 20 minutes until potatoes are tender.
