Ingredients
- 2 pounds boneless skinless chicken thighs
- 1 teaspoon kosher salt
- ½ teaspoon fresh ground black pepper
- ½ cup harissa (homemade or storebought)
- 1 tablespoon extra virgin olive oil
- 5 cloves garlic (finely minced or grated)
- 2 tablespoons lemon juice
- ¼ cup honey
Instructions
- Pat the chicken thighs dry with paper towels and season them with salt and pepper on both sides.
- In a large bowl, whisk together harissa, minced garlic, lemon juice, and honey until combined.
- Add chicken thighs to the marinade and toss to coat thoroughly; cover and refrigerate for at least 30 minutes.
- Preheat oven to 400°F (204°C) and line a sheet pan with parchment paper.
- Place marinated chicken on the sheet pan, brush with leftover marinade, and bake for 13-15 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest covered in foil for about 10 minutes before serving.
