  • 1 ½ cups ripe bananas (mashed)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together oats, flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the egg, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Gently fold in the mashed bananas until fully incorporated.
  6. Divide the batter evenly into a greased muffin tin.
  7. For the topping, mix oats with cinnamon and sprinkle over each muffin.
  8. Bake for 18 to 20 minutes or until a toothpick comes out clean.
