Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, basil pesto, salt, and pepper until smooth.
- Carefully cut pockets into each chicken breast using a sharp knife.
- Stuff each pocket with the cream cheese mixture.
- Dip stuffed chicken breasts in beaten egg, then coat with breadcrumb mix.
- Place in a baking dish and drizzle with olive oil; bake for 20 minutes or until fully cooked.
