Ingredients
- 60 ml milk
- 120 ml water
- 21 g active dry yeast
- 50 g sugar
- 550 g bread flour
- 2 eggs
- 1 egg yolk
- 5 g salt
- 70 g unsalted butter
- Vegetable oil (for frying)
- Chocolate spread or apricot jam (for filling)
Instructions
- In a bowl, combine lukewarm milk, water, yeast, and sugar. Let it sit for 10 minutes until bubbly.
- In a stand mixer bowl, mix flour, eggs, egg yolk, salt, and the yeast mixture. Knead on low then medium speed for 6–8 minutes until smooth. Add butter and knead for another 3–4 minutes.
- Cover the bowl with clingfilm and let the dough rise at room temperature until doubled in size (about 1 to 1.5 hours).
- Roll out the dough to about 2 cm thick and cut into heart shapes using a cookie cutter. Allow them to rise again on a floured baking sheet for an hour.
- Heat oil to 170–180°C (340–355°F). Fry doughnuts until golden brown on both sides.
- Dust with sugar mixture and fill with your choice of chocolate spread or jam.
