Ingredients
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 1/4 cup pineapple juice
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 pieces chicken thighs (or drumsticks/breasts)
- Pineapple slices for grilling
Instructions
- In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, minced garlic, minced ginger, and black pepper.
- Place chicken in a resealable bag or shallow dish and pour marinade over it. Seal or cover and refrigerate for at least 2 hours (overnight for better flavor).
- Preheat grill to medium-high heat.
- Remove chicken from marinade and discard excess marinade. Grill chicken for about 6-8 minutes per side until it reaches an internal temperature of 165°F (75°C). Grill pineapple slices for the last few minutes until lightly charred.
- Let chicken rest for a few minutes before slicing and serving with grilled pineapple.
