  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1/4 cup pineapple juice
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 pieces chicken thighs (or drumsticks/breasts)
  • Pineapple slices for grilling

Instructions

  1. In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, minced garlic, minced ginger, and black pepper.
  2. Place chicken in a resealable bag or shallow dish and pour marinade over it. Seal or cover and refrigerate for at least 2 hours (overnight for better flavor).
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade and discard excess marinade. Grill chicken for about 6-8 minutes per side until it reaches an internal temperature of 165°F (75°C). Grill pineapple slices for the last few minutes until lightly charred.
