Ingredients

  • 1/2 cup unsalted butter (cold)
  • 1/4 cup whole milk (warm)
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually mix in warm milk until a shaggy dough forms. Knead on a floured surface until smooth.
  2. Flatten cold butter between parchment sheets into a rectangle and chill.
  3. Roll out the dough into a rectangle, place the chilled butter on one half, and fold over to encase it. Roll out again and fold into thirds. Repeat this process two more times.
  4. Cut triangles from the dough and roll from base to tip to shape croissants.
  5. Place shaped croissants on lined trays to proof until doubled in size (about 1 hour). Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
