Ingredients
- 4 large lemons
- 2 cups granulated sugar
- 1 cup water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Wash and dry the lemons, then zest them and set the zest aside. Juice the lemons, discarding any seeds.
- In a large pot, combine lemon juice, zest, sugar, and water. Stir until the sugar dissolves completely.
- Bring the mixture to a gentle boil over medium heat. Reduce heat and simmer for 30-40 minutes, stirring occasionally until thickened.
- Test consistency by placing a small amount on a cold plate; if it gels after cooling briefly, it’s ready. If not, continue cooking for a few more minutes.
- Remove from heat and cool slightly before pouring into sterilized jars while still warm. Seal tightly and let cool completely at room temperature.
