  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 carrot (large)
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • litres / 6 cups chicken stock
  • 75g / 1/2 cup giant couscous
  • 250g / 2 cups cooked turkey or chicken
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Sauté chopped onion, celery, carrot, and minced garlic with thyme until softened (about 5 minutes).
  2. Add chicken stock and cooked turkey, tossing in bay leaves. Bring to a gentle boil and season with salt and pepper.
  3. Stir in giant couscous, reduce heat to medium, and cook for 10 minutes until couscous is tender.
  4. Remove from heat, discard bay leaves, sprinkle with parsley, and serve hot.
