Instructions
- In a mixing bowl, combine cottage cheese, fresh blueberries, lemon zest, honey (or maple syrup), almond flour, vanilla extract, and salt. Mix gently until well combined.
- Scoop out small portions (about 1 tablespoon each) and roll them into spheres.
- Preheat your oven to 350°F (175°C). Place the bites on a parchment-lined baking sheet and bake for 10-12 minutes until golden.
- Allow to cool slightly before drizzling with extra honey and garnishing with additional blueberries.
