Ingredients
- 1/2 cup tahini
- 2 tablespoons olive oil
- 1/4 cup fresh lemon juice (about 2 large lemons)
- 1/2 teaspoon salt
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- 3 cloves garlic, finely minced
- 1/4 cup + 2 tablespoons water (or more as needed)
Instructions
- Finely mince the garlic and combine it with all other ingredients in a mixing bowl or jar, starting with just 1/4 cup of water.
- Whisk or shake until well combined. If the mixture is too thick, gradually add the extra two tablespoons of water until reaching your desired consistency.
- Taste the dressing and adjust flavors if necessary; add more maple syrup if desired.
- Serve over salads, use as a dip, or drizzle over roasted vegetables.
