- 1 cup all-purpose flour

- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 1 tablespoon poppy seeds
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, blend the buttermilk, egg, melted butter, lemon zest, lemon juice, and poppy seeds.
- Gently fold the wet ingredients into the dry ingredients until just combined; lumps are okay.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top; flip and cook until golden brown.
- Repeat until all batter is used and serve warm with your favorite toppings.
