  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup walnuts or pecans, roughly chopped
  • 1/3 cup maple syrup (for topping)

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, sift together flour, baking soda, and salt; set aside.
  3. In a stand mixer, beat softened butter and brown sugar until fluffy. Add maple syrup and mix well. Incorporate eggs one at a time, then add bananas and vanilla.
  4. With the mixer on low speed, gradually add dry ingredients and yogurt until just combined. Fold in nuts gently.
  5. Pour batter into prepared pan and top with reserved nuts. Bake for 50-60 minutes until a toothpick comes out clean.
  6. Drizzle warm maple syrup over the bread while it's still warm.
