- 5–6 organic sundried tomatoes
- 1 cup chopped organic kale
Instructions
- In a large pot over medium heat, combine olive oil and butter. Add garlic and sauté until fragrant.
- Stir in flour to create a roux; cook for about 2 minutes until golden brown.
- Gradually whisk in chicken stock along with Tuscan blend, salt, sundried tomatoes, and tomato paste.
- Add heavy cream and vinegar; bring to a gentle simmer while stirring occasionally.
- Incorporate shredded chicken and gnocchi; simmer for about 5 minutes until gnocchi is tender.
- Fold in kale, cooking for an additional minute before squeezing in fresh lemon juice.
- Serve warm topped with freshly grated parmesan cheese.
