  • 1 cup glutinous rice flour (mochiko)
  • ¼ cup granulated sugar
  • ¾ cup water
  • 8 small-to-medium fresh strawberries (hulled and dry)
  • 1 cup sweet red bean paste or vanilla cream (whipped cream mixed with powdered sugar and vanilla)
  • ½ cup potato starch or cornstarch (for dusting)

Instructions

  1. Prep the strawberries by washing, hulling, and drying them completely.
  2. Wrap each berry in sweet red bean paste or whipped vanilla cream and chill briefly.
  3. In a mixing bowl, combine glutinous rice flour, sugar, salt, and water until smooth. Microwave in short bursts for 2½–3½ minutes or steam until glossy.
  4. Transfer dough to a well-starched surface, cool slightly, then cut into 8 equal pieces.
  5. Flatten each piece into circles and place a stuffed strawberry in the center. Fold the dough over and seal.
  6. Allow mochis to rest for about 10 minutes before serving.
