- 140 g vegan cookies
- 45 g unsalted vegan butter
- 150 g soaked cashews
- 300 g vegan cream cheese
- 80 g vegan Greek-style yogurt
- 1 batch vegan passion fruit curd
Instructions
- Prepare the passion fruit curd up to two days in advance and refrigerate.
- In a food processor, combine vegan cookies, melted butter, and sea salt; pulse until crumbly.
- Press the mixture firmly into the bottom of a lined loaf pan and chill.
- Blend soaked cashews, cream cheese, yogurt, vanilla extract, and reserved passion fruit curd until smooth; pour over the crust.
- Refrigerate for at least 6 hours or overnight to set.
- Warm the remaining passion fruit curd gently; spread it over the cheesecake before serving.
