- 2 cups chopped bell peppers (mixed colors)

- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine chopped bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives.
- Drizzle with olive oil and sprinkle with dried oregano, garlic powder, salt, and black pepper. Toss until well coated.
- Spread the vegetable mixture evenly on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through for even cooking.
- Serve warm; optional to top with crumbled feta cheese.
