Ingredients
- 10 ounces smoked beef sausage
- 4 ounces penne or rigatoni pasta
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup diced mixed bell peppers
- 1/2 cup diced onion
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- Fresh spinach (optional)
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Slice the smoked beef sausage and sauté until lightly browned.
- Add diced onion and mixed bell peppers; cook for about 3–4 minutes until softened.
- Stir in Cajun seasoning and garlic powder; cook for another minute.
- Add pasta and chicken broth; bring to a simmer and cook until pasta is tender.
- Pour in heavy cream and sprinkle Parmesan cheese; stir continuously until creamy.
- If desired, add cayenne pepper for extra heat and stir in fresh spinach until wilted.
- Serve hot, garnished with chopped parsley.
