- 1 whole seedless navel orange
- 4 eggs
- 3/4 cup olive oil

Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan with grease and flour or parchment paper.
- In a blender, combine the quartered orange (seeds removed), eggs, olive oil, granulated sugar, sour cream, and vanilla extract. Blend until smooth.
- Add the flour, baking powder, and salt; pulse just until combined.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
- Allow cooling for about 10 minutes in the pan before transferring to a wire rack.
- For the glaze, mix confectioners' sugar with orange juice until smooth and drizzle over the cooled cake.
