  • 1 cup (200g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup (120ml) fresh orange juice
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup (60ml) honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla extract, orange zest, and juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. Prepare honey drizzle by warming honey with orange juice in a saucepan.
  8. Drizzle warm mixture over the baked cake before cooling.
