Ingredients
- 1 cup (200g) pitted dates, chopped
- 1 cup (240ml) boiling water
- 1 tsp baking soda
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 oranges
- 1/2 cup (120ml) fresh orange juice
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1/4 cup (60ml) honey
- 1 tbsp fresh orange juice
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch cake tin.
- In a bowl, whisk together flour, baking powder, ground cardamom, and salt.
- In another bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla extract, orange zest, and juice.
- Fold in chopped dates into the wet mixture.
- Gradually add dry ingredients to wet ingredients until just combined.
- Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
- Prepare honey drizzle by warming honey with orange juice in a saucepan.
- Drizzle warm mixture over the baked cake before cooling.
