  • Icing sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8.5 x 4.5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, combine Greek yogurt, sugar, eggs, orange zest, orange juice, and vanilla extract. Whisk in olive oil until well mixed.
  4. Add dry ingredients to the wet mixture; stir gently until just combined.
  5. Pour into the prepared loaf pan and bake for 50–55 minutes or until golden brown and a toothpick comes out clean.
  6. Cool in the pan for about 20 minutes before transferring to a wire rack to cool completely.
