  • 1 orange
  • ⅓ cup walnuts
  • ¼ cup pomegranate seeds (or dried cranberries)
  • ½ cup feta (or non-dairy feta, crumbled)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons orange juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon mustard (American or Dijon)
  • ¾ teaspoon salt
  • 2 twists black pepper

Instructions

  1. Prepare the base: In a large serving platter, add mixed salad greens. Thinly slice the cored pears and arrange them over the greens. Peel the orange, separate the wedges, and add them to the salad.
  2. Add toppings: Sprinkle crushed walnuts and pomegranate seeds (or dried cranberries) over the salad, then top with crumbled feta.
  3. Make the dressing: In a bowl or jar, whisk together olive oil, orange juice, apple cider vinegar, maple syrup, mustard, salt, and pepper until well combined.
