Instructions
- Prepare the marinade by blending sliced bell peppers, jalapeño, garlic, onion, olive oil, lemon juice, and spices in a mixing bowl until smooth.
- Coat chicken thighs with half the marinade and refrigerate for at least one hour or overnight.
- Preheat the grill or oven (medium-high heat or 400°F).
- Cook the marinated chicken thighs on the grill for 5–7 minutes per side or bake for about 25 minutes until fully cooked.
- Allow resting briefly before serving. Drizzle with reserved marinade if desired.
