Instructions
- In a large mixing bowl, combine the shredded chicken, mayonnaise, ají amarillo paste, lime juice, cilantro, garlic, red onion, and salt.
- Mix gently until all ingredients are well-coated and evenly combined.
- Taste and adjust seasoning if necessary.
- Serve immediately on a bed of lettuce, in sandwiches or wraps, or with crackers.
